Complimented with the classic soundtrack: DJ Jazzy Jeff & The Fresh Prince – Summertime. You can enjoy this favourite of mine, watermelon and feta salad whilst soaking up the rays. This salad screams summer with the juicy watermelon, crisp leaves and tangy feta they are a seriously delicious combination and its a nutritional meal with a healthful amount of carbs, fat and protein, apart from also looking insta-worthy!
In my eyes the more colours I can get on my dish the better and yes, I am very aware this is a big ass salad but after an early hot yoga class and having very limited carbs through-out the day I was ready to devour this plate of pure goodness.
- Romaine Lettuce
- Plum Tomatoes
- Spring Onion
- Parsley Leaves
- Lemon wedge (To squeeze over the top)
- Feta Cheese
- Extra Virgin Olive Oil <- I recommend trying this oil!
This one’s simple turn up your music and get chopping! (Just tear the romaine leaves) Toss all your finely chopped ingredients together in a bowl, drizzle with extra virgin olive oil and a squeeze of lemon, sprinkle over the parsley and its ready to devour.
I buy a lot of my produce locally from Altrincham market, on saturday mornings you will catch me there at 8am grabbing my groceries. (Fuck that sounded american) I prefer shopping this way rather than at a local supermarket because I know Im supporting my local economy but more importantly Im fuelling my body with quality ingredients and you cannot complain about the price, I tend to spend around £15 for a weeks worth of fresh fruit and vegetables!
